Focaccia Pie made with Ricotta Cheese
This focaccia has no yeast, water or oil in its dough. The main ingredient is ricotta cheese. If that sounds strange to you I understand, I felt the same way when I first learned about it...but believe me, you can't tell what's missing! Ricotta gives such a good and delicate flavour to it, and the consistency is really soft, just like a regular focaccia. The fact that there is no yeast makes it even faster to make because it doesn't need to rise. You can make it in an hour and eat it warm or wait for it cool down. I love it both ways. You can fill it with whatever you like so...what else can I say? This focaccia is simply perfect as a last minute recipe! |

Step 1Put all the ricotta cheese in a big bowl and add flour to it.
Cut the butter in smaller pieces and put it in the same bowl too. Add parmesan cheese and finally salt and pepper, to your liking. Mix all of these ingredients together. You can start doing that with a fork. |
Step 2Keep mixing everything together using your hands now. Knead until you obtain a compact dough and finally divide it in 2 equal pieces.

Step 3Cover your pan with parchment paper and place one of the 2 dough balls in it. Press it with your fingers to flatten it until it gets thinner and covers the whole pan's surface.
Finally prick it with a fork. |
Step 4Put your filling on the dough now, leaving a free border all around to be able to close it later. I laid ham on it first, then I sliced my mozzarella and added it to the top.
You can fill it with whatever you like. |
Step 5Take your other piece of dough and flatten it too, using your hands or a rolling pin. You need to make another dough disc, just like the other one, as big as the pan. Doing this on a pastry mat was perfect to me because many pan's sizes are drawn on it so you know exactly how big your disc must become. Plus it doesn't stick to the mat.
Now carefully lift it with your hands and lay it in the pan, on top of the filling. Press the borders with your fingers and do the same using a fork to make sure that your focaccia is closed. Finally spread some olive oil over the top and prick the dough with a fork. |
Step 6Preheat your oven and bake at 200°C (400F) for 30 minutes.
