Lasagne Verdi |
Like tortellini, lasagne verdi is a typical kind of pasta from Emilia Romagna, Italy. The most popular kind of lasagna is made with the regular egg pasta. These lasagne verdi are also made with egg pasta, the only difference is that it's green! The green color is given by spinach, which is the most common way to give color to the dough, but it's also possible to use different kinds of vegetables. Step 2Pour the flour on a pastry board and mix it a little with the spinach using your hands.
Add the eggs and start to mix them using a fork, then incorporate the flour with your hands and knead for a while, until you obtain a smooth and compact green dough. |
Step 3Cut a little piece of dough and cover the remaining one under a bowl.
Flatten that piece a little with your hand and pass it through the largest level of your pasta machine. Pass it through the next levels, one by one, until you reach the thinnest one and your dough becomes long and thin. Take the baking tin where you are going to bake your lasagna in, and place it near your dough sheet. Cut the sheet in smaller pieces. Those pieces must be about as long as the baking tin. Do the same with the rest of your dough. |
Step 4Put water in a large pot and add some butter in it. Put it on the stove and wait for it boil. The butter is important for the pasta not to stick to each other while cooking.
Now dip your first sheet of dough in the boiling water and take it out as soon as the sheet comes up on the surface. You can cook 2 at a time if your pot is big enough. Lay your cooked sheet of pasta on a cloth and cook the rest of your pasta like you did for the first sheet. |
Put your meat sauce in a pot or bowl, add all the bechamel sauce in it and mix them together.
You can even keep them separate like most people do, but I believe that the lasagna tastes so much better this way! |
Step 6Butter your baking tin and lay your first sheet of cooked pasta in it.
Spread some sauce (meat sauce + bechamel sauce) on it and add some greated parmesan cheese on top. Again, place a new sheet of pasta, spread some sauce and parmesan cheese. Keep doing this until your baking tin is full. End the last layer with more sauce and a bigger amount of parmesan cheese. Bake at 200°C (400F) for 25/30 minutes. Keep checking it from time to time to make sure that it's baking properly. |
You can finally taste your lasagna now! Was there some dough left from this recipe?
